Instructions
- Whisk 1 cup flour, 1 cup milk, 2 eggs, and 1 tablespoon olive oil in a medium bowl until your batter is smooth and lump-free.
- Warm a 10-inch non-stick skillet over medium heat for 2 minutes. Pour ¼ cup batter, tilting the pan to spread evenly.
- Cook the crepe for 1-2 minutes until the edges look dry and the bottom turns light golden. Gently flip with a thin spatula.
- Cook the opposite side for 30-45 seconds. Transfer to a plate and repeat with remaining batter.
- Heat a separate skillet over medium-high heat. Add sliced mushrooms and cook for 3-4 minutes until they release moisture.
- Toss 1 cup chopped spinach into the mushroom pan. Stir for 1-2 minutes until spinach wilts and becomes tender.
- Incorporate 1 cup shredded chicken into the vegetable mixture. Season with ½ teaspoon salt and ¼ teaspoon black pepper.
- Spoon 2-3 tablespoons of the chicken-vegetable filling into the center of each crepe. Fold the sides to create a neat package.
- Arrange crepes seam-side down on warm plates. Serve immediately while the filling remains hot.
