Instructions
- Pour 0.33 cup lime juice, 0.25 cup olive oil, 8 ounces Island Salsa, and black pepper into a large ziptop bag. Add 1.5 pounds chicken breasts and seal tightly. Massage the bag to thoroughly coat your chicken.
- Refrigerate the marinating chicken for at least 30 minutes, or up to overnight for deeper flavor absorption.
- Preheat your grill to 400°F with medium-high heat. Lightly coat the grill grates with cooking spray to prevent sticking.
- Slice 1 large yellow bell pepper into strips. Toss with 2 tablespoons olive oil, 1 teaspoon kosher salt, and 0.5 teaspoon black pepper in a grill basket.
- Place chicken on one side of the grill and peppers in the grill basket on the other side. Discard the used marinade completely.
- Grill chicken for 4-5 minutes with the lid closed. Flip and cook another 4-5 minutes until internal temperature reaches 165°F.
- Stir the peppers occasionally during cooking, watching for desired tenderness.
- Transfer grilled chicken to a serving platter. Top each breast with 4 ounces Island Salsa, 0.5 cup diced mango, and 0.33 cup pineapple tidbits.
- Garnish with 2-4 tablespoons fresh chopped cilantro. Serve immediately while hot.
