Description

Grilled Mango Pineapple Chicken brings tropical vibes right to your dinner table, letting you escape to a sunny paradise without leaving your backyard. Sweet and tangy fruit caramelizes over tender chicken, creating a simple yet spectacular meal that sparks joy with each delicious bite.

Ingredients

Scale

Main Proteins:

  • 1.5 pounds thin-sliced boneless skinless chicken breasts

Fruits and Vegetables:

  • 1 large yellow bell pepper
  • 0.5 cup diced mango
  • 0.33 cup pineapple tidbits
  • 8 ounces Island Salsa
  • 4 ounces Island Salsa

Liquids and Seasonings:

  • 0.33 cup lime juice
  • 0.25 cup olive oil
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 to 4 tablespoons fresh cilantro

Instructions

  1. Pour 0.33 cup lime juice, 0.25 cup olive oil, 8 ounces Island Salsa, and black pepper into a large ziptop bag. Add 1.5 pounds chicken breasts and seal tightly. Massage the bag to thoroughly coat your chicken.
  2. Refrigerate the marinating chicken for at least 30 minutes, or up to overnight for deeper flavor absorption.
  3. Preheat your grill to 400°F with medium-high heat. Lightly coat the grill grates with cooking spray to prevent sticking.
  4. Slice 1 large yellow bell pepper into strips. Toss with 2 tablespoons olive oil, 1 teaspoon kosher salt, and 0.5 teaspoon black pepper in a grill basket.
  5. Place chicken on one side of the grill and peppers in the grill basket on the other side. Discard the used marinade completely.
  6. Grill chicken for 4-5 minutes with the lid closed. Flip and cook another 4-5 minutes until internal temperature reaches 165°F.
  7. Stir the peppers occasionally during cooking, watching for desired tenderness.
  8. Transfer grilled chicken to a serving platter. Top each breast with 4 ounces Island Salsa, 0.5 cup diced mango, and 0.33 cup pineapple tidbits.
  9. Garnish with 2-4 tablespoons fresh chopped cilantro. Serve immediately while hot.

Notes

  • Marinate the chicken for maximum flavor, but don’t exceed 24 hours or the acid will start breaking down the meat’s texture.
  • Check chicken’s internal temperature reaches 165°F to ensure safe cooking without drying out the meat.
  • For a vegetarian version, replace chicken with firm tofu or portobello mushrooms and use the same marinade technique.
  • Fresh tropical fruits make this dish sing, so choose ripe, fragrant mangoes and pineapples for the best taste and presentation.
