Instructions

- Warm 2 tablespoons olive oil in a tagine or heavy pot at medium heat for 2 minutes. Sauté onions until they turn translucent and soft, about 4 minutes.
- Add minced garlic and measured spices to the pot. Stir continuously for 30 seconds to release their aromatic flavors without burning.
- Place 4 chicken pieces into the pot, positioning them carefully to brown evenly. Cook each side for 3-4 minutes until a golden crust develops.
- Pour 2 cups chicken broth over the chicken, ensuring the pieces are mostly submerged. Scatter 1 cup mixed dried fruits and ½ cup almonds around the meat.
- Reduce heat to low, cover the pot, and let the mixture simmer gently for 50 minutes. Resist lifting the lid to maintain consistent cooking temperature.
- Remove the lid and continue simmering for an additional 10 minutes. The sauce will naturally reduce and thicken around the tender chicken pieces.
