Description

Moroccan Chicken Tagine brings warm, aromatic spices from North African kitchens straight to your dinner table. Slow-simmered with tender chicken, fragrant herbs, and a blend of traditional seasonings, this hearty dish delivers authentic comfort in every delicious bite.

Ingredients

Scale

Primary Protein:

  • 4 pieces Chicken

Supporting Vegetables and Aromatics:

  • 1 large Onion
  • 3 cloves Garlic

Spices and Seasonings:

  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Ginger
  • 1 teaspoon Cinnamon
  • 1 teaspoon Turmeric
  • 1 teaspoon Pepper
  • 2 tablespoons Olive oil
  • 2 cups Chicken broth
  • 1 cup Dried fruits
  • ½ cup Almonds

Instructions

  1. Slice 1 large onion and mince 3 garlic cloves with a sharp knife. Gather all 1 teaspoon measurements of cumin, coriander, ginger, cinnamon, turmeric, and pepper into small dishes.
  2. Warm 2 tablespoons olive oil in a tagine or heavy pot at medium heat for 2 minutes. Sauté onions until they turn translucent and soft, about 4 minutes.
  3. Add minced garlic and measured spices to the pot. Stir continuously for 30 seconds to release their aromatic flavors without burning.
  4. Place 4 chicken pieces into the pot, positioning them carefully to brown evenly. Cook each side for 3-4 minutes until a golden crust develops.
  5. Pour 2 cups chicken broth over the chicken, ensuring the pieces are mostly submerged. Scatter 1 cup mixed dried fruits and ½ cup almonds around the meat.
  6. Reduce heat to low, cover the pot, and let the mixture simmer gently for 50 minutes. Resist lifting the lid to maintain consistent cooking temperature.
  7. Remove the lid and continue simmering for an additional 10 minutes. The sauce will naturally reduce and thicken around the tender chicken pieces.

Notes

  • Use a heavy-bottomed pot or traditional tagine to ensure even heat distribution and prevent burning.
  • Toast whole spices before grinding to release their deeper, more complex flavors and enhance the dish’s aroma.
  • For a lighter version, swap chicken thighs with skinless chicken breasts and reduce the cooking time to prevent drying out.
  • When adding dried fruits, choose high-quality options like Medjool dates or Turkish apricots for the most authentic and rich flavor profile.
