Description

Sweet Smoky Mango Pineapple Chicken delivers tropical flavors straight from your kitchen to the dinner table. Tender chicken pieces glazed with juicy fruit and a hint of smokiness make this meal a total winner for your family’s weeknight lineup.

Ingredients

Scale

Proteins:

  • 4 boneless, skinless chicken breasts

Fruits:

  • 1 cup diced fresh mango
  • 1 cup pineapple chunks

Seasonings and Liquids:

  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon smoked paprika
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 lime
  • Fresh cilantro or mint

Instructions

  1. Grab a blender and combine 1 cup diced mango, 1 cup pineapple chunks, 2 minced garlic cloves, 1 tsp smoked paprika, 2 tbsp honey, lime juice from 1 lime, 2 tbsp soy sauce, and 2 tbsp olive oil. Blend until completely smooth.
  2. Pour the marinade over 4 chicken breasts in a sealed container or plastic bag. Refrigerate for 45 minutes to ensure deep flavor infusion.
  3. Fire up your outdoor grill to medium-high heat around 400°F. Clean and lightly oil the grates to prevent sticking.
  4. Remove chicken from marinade, letting excess drip off. Place chicken breasts directly on preheated grill grates.
  5. Grill chicken for 6-7 minutes on the first side until golden brown edges appear. Flip and cook another 6-7 minutes.
  6. Check chicken’s internal temperature with a meat thermometer. Ensure it reaches exactly 165°F for safe consumption.
  7. While chicken cooks, transfer remaining marinade to a small saucepan. Simmer at medium heat for 8-10 minutes until sauce thickens and reduces.
  8. During the final 2 minutes of grilling, brush thickened marinade glaze onto chicken to create caramelized edges.
  9. Transfer grilled chicken to serving plate. Garnish with fresh pineapple chunks and chopped cilantro or mint leaves.

Notes

  • Use fresh, ripe mangoes and pineapples for the most vibrant and sweet marinade flavor.
  • Save a portion of the marinade before adding raw chicken to use as a safe glaze for finishing.
  • Marinate chicken for at least 30 minutes but no longer than 4 hours to prevent the acid from breaking down the meat.
  • Check chicken temperature with a meat thermometer to ensure it reaches 165°F for safe consumption without overcooking.
