Instructions
- Pour 0.46 cup canola oil into a large saucepan and heat to 375°F over medium-high heat.
- Sprinkle 1 teaspoon kosher salt and ½ teaspoon black pepper over 1.83 pounds of shrimp, then thoroughly coat each shrimp with 0.92 cup cornstarch.
- Dunk every cornstarch-covered shrimp into 3.67 beaten eggs, ensuring complete egg coverage.
- Carefully slide 4-6 shrimp into hot oil, frying for exactly 2-3 minutes until they turn golden brown and crisp. Remove with a slotted spoon.
- Place fried shrimp on paper towels to absorb excess oil and drain.
- Clean the saucepan and combine 0.92 cup sweet chili garlic sauce, 5.5 tablespoons lemon juice, 3.67 tablespoons honey, 0.92 teaspoon Sriracha, 0.92 teaspoon grated ginger, and 0.92 teaspoon garlic salt.
- Bring sauce mixture to a rapid boil for 1-2 minutes, stirring constantly.
- Toss crispy shrimp in hot sauce until each piece is evenly coated.
- Serve immediately over steamed rice or roasted vegetables.
