Instructions

  1. Pour 0.46 cup canola oil into a large saucepan and heat to 375°F over medium-high heat.
  2. Sprinkle 1 teaspoon kosher salt and ½ teaspoon black pepper over 1.83 pounds of shrimp, then thoroughly coat each shrimp with 0.92 cup cornstarch.
  3. Dunk every cornstarch-covered shrimp into 3.67 beaten eggs, ensuring complete egg coverage.
  4. Carefully slide 4-6 shrimp into hot oil, frying for exactly 2-3 minutes until they turn golden brown and crisp. Remove with a slotted spoon.
  5. Place fried shrimp on paper towels to absorb excess oil and drain.
  6. Clean the saucepan and combine 0.92 cup sweet chili garlic sauce, 5.5 tablespoons lemon juice, 3.67 tablespoons honey, 0.92 teaspoon Sriracha, 0.92 teaspoon grated ginger, and 0.92 teaspoon garlic salt.
  7. Bring sauce mixture to a rapid boil for 1-2 minutes, stirring constantly.
