Description

Beef tips with mushroom creates a comforting dinner that brings rich, savory flavors straight to your table. Tender beef chunks simmered in a hearty mushroom sauce make this classic meal perfect for family gatherings.

Ingredients

Scale

Protein:

  • 2 lbs sirloin beef tips

Vegetables and Aromatics:

  • 1 white onion, diced
  • 8 oz sliced cremini mushrooms
  • ½ cup sliced pepperoncinis

Seasonings and Liquids:

  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 beef bouillon cube
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 ½ cups-2 cups beef stock
  • 2 tablespoons cornstarch
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Dust 2 lbs of sirloin beef tips with kosher salt, black pepper, and 2 tablespoons of all-purpose flour, ensuring each piece is evenly coated.
  2. Melt 3 tablespoons of butter in a large skillet over medium-high heat at 375°F. Sear beef tips in batches for 2-3 minutes per side until a golden-brown crust forms. Transfer browned beef to a clean plate.
  3. Add diced white onion to the same skillet. Sauté for 2 minutes, scraping up the flavorful browned bits from the bottom of the pan.
  4. For slow cooker method, transfer seared beef and onions to the slow cooker. Add 8 oz sliced cremini mushrooms, 2 teaspoons garlic powder, 1 teaspoon onion powder, 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1 beef bouillon cube, 1 tablespoon Worcestershire sauce, 1 bay leaf, ½ cup sliced pepperoncinis, and 2 cups beef stock.
  5. Cook on high for 3-4 hours or low for 6-7 hours until beef becomes tender and easily pulls apart.
  6. Thirty minutes before cooking completes, whisk 2 tablespoons cornstarch with 3 tablespoons water until smooth. Stir into the slow cooker to thicken the sauce.
  7. Remove bay leaf before serving. Season with additional salt and pepper to taste.
  8. For instant pot method, follow similar steps but cook on high pressure for 35 minutes. Allow natural pressure release for 10 minutes, then manually release remaining pressure.
  9. After pressure releases, switch instant pot to “sauté” mode. Add cornstarch slurry and stir until sauce reaches desired thickness.

Notes

  • Flouring the beef helps create a delicious golden crust and thickens the sauce naturally during cooking.
  • Searing the beef in batches prevents overcrowding, which ensures a perfect brown exterior that locks in flavor.
  • For a gluten-free version, swap wheat flour with cornstarch or almond flour and use gluten-free beef stock.
  • Pepperoncinis add a tangy kick, but you can omit them if your family prefers a milder flavor profile.
