Instructions
- Dust 2 lbs of sirloin beef tips with kosher salt, black pepper, and 2 tablespoons of all-purpose flour, ensuring each piece is evenly coated.
- Melt 3 tablespoons of butter in a large skillet over medium-high heat at 375°F. Sear beef tips in batches for 2-3 minutes per side until a golden-brown crust forms. Transfer browned beef to a clean plate.
- Add diced white onion to the same skillet. Sauté for 2 minutes, scraping up the flavorful browned bits from the bottom of the pan.
- For slow cooker method, transfer seared beef and onions to the slow cooker. Add 8 oz sliced cremini mushrooms, 2 teaspoons garlic powder, 1 teaspoon onion powder, 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1 beef bouillon cube, 1 tablespoon Worcestershire sauce, 1 bay leaf, ½ cup sliced pepperoncinis, and 2 cups beef stock.
- Cook on high for 3-4 hours or low for 6-7 hours until beef becomes tender and easily pulls apart.
- Thirty minutes before cooking completes, whisk 2 tablespoons cornstarch with 3 tablespoons water until smooth. Stir into the slow cooker to thicken the sauce.
- Remove bay leaf before serving. Season with additional salt and pepper to taste.
- For instant pot method, follow similar steps but cook on high pressure for 35 minutes. Allow natural pressure release for 10 minutes, then manually release remaining pressure.
- After pressure releases, switch instant pot to “sauté” mode. Add cornstarch slurry and stir until sauce reaches desired thickness.
