Instructions
- Whisk 2 tbsp soy sauce, 1 tbsp honey, 1 tbsp lime juice, 2 tbsp coconut milk, 2 minced garlic cloves, 1 tbsp grated ginger, 1 tsp turmeric, and 1 tsp coriander in a large bowl. Your marinade is ready.
- Add 1 lb chicken strips to the marinade. Coat thoroughly. Cover and refrigerate for 30 minutes to maximize flavor absorption.
- Preheat your grill to 400°F. Thread chilled chicken strips onto metal or soaked wooden skewers, ensuring even spacing.
- Grill chicken skewers for 5-7 minutes per side. Rotate carefully to prevent burning. Ensure internal temperature reaches 165°F for safe consumption.
- While chicken cooks, prepare peanut sauce by combining ½ cup peanut butter, 2 tbsp soy sauce, 1 tbsp lime juice, 1 tsp honey, ½ cup coconut milk, 1 tbsp ginger, and 2 minced garlic cloves in a small saucepan.
- Heat peanut sauce over low temperature for 3-4 minutes. Stir constantly to prevent scorching. Add ½ tbsp water if sauce seems too thick.
