  • 2 to 4 tablespoons chopped fresh cilantro

Instructions

  1. Combine 1 ½ pounds chicken breasts with 8 ounces mango-pineapple salsa, ⅓ cup lime juice, ¼ cup olive oil, and ½ teaspoon black pepper in a large zip-top bag. Massage the bag to thoroughly coat the chicken.
  2. Refrigerate the marinated chicken for at least 30 minutes, or up to overnight for deeper flavor.
  3. Preheat your grill to 400°F and brush the grates with oil to prevent sticking.
  4. Prepare 1 large yellow bell pepper by slicing into ½-inch strips. Toss with 2 tablespoons olive oil, 1 teaspoon kosher salt, and ½ teaspoon black pepper.
  5. Place seasoned pepper strips in a grill basket to prevent falling through grates.
  6. Remove chicken from marinade and place on the hot grill at 400°F. Cook with lid closed for 4-5 minutes per side.
  7. Grill peppers simultaneously, stirring occasionally until lightly charred and tender, about 8-10 minutes.
  8. Check chicken internal temperature reaches 165°F to ensure it’s fully cooked and no longer pink.
  9. Transfer grilled chicken to a serving platter and top with 4 ounces additional mango-pineapple salsa.
  10. Garnish with ½ cup diced mango and ⅓ cup pineapple tidbits.
  11. Sprinkle 2-4 tablespoons chopped fresh cilantro over the dish if desired.
