Instructions
- Combine 1 ½ pounds chicken breasts with 8 ounces mango-pineapple salsa, ⅓ cup lime juice, ¼ cup olive oil, and ½ teaspoon black pepper in a large zip-top bag. Massage the bag to thoroughly coat the chicken.
- Refrigerate the marinated chicken for at least 30 minutes, or up to overnight for deeper flavor.
- Preheat your grill to 400°F and brush the grates with oil to prevent sticking.
- Prepare 1 large yellow bell pepper by slicing into ½-inch strips. Toss with 2 tablespoons olive oil, 1 teaspoon kosher salt, and ½ teaspoon black pepper.
- Place seasoned pepper strips in a grill basket to prevent falling through grates.
- Remove chicken from marinade and place on the hot grill at 400°F. Cook with lid closed for 4-5 minutes per side.

- Check chicken internal temperature reaches 165°F to ensure it’s fully cooked and no longer pink.
