Instructions
- Heat 1 tablespoon of oil in a Dutch oven at medium temperature. Sear 1 pound andouille sausage rounds for 5 minutes until golden brown, then transfer to a separate plate.
- Cook 1 pound chicken thighs with 1 teaspoon Cajun spice blend in the same pot. Sear thoroughly until completely cooked, then remove and set aside with sausage.
- Melt 1 tablespoon unsalted butter in the hot pot. Sauté 1 cup diced onion, 1 cup celery, 1 cup bell pepper, and 1 jalapeno for 5 minutes until softened.
- Add 4 garlic cloves, remaining 1 teaspoon Cajun spice, and 1 teaspoon ground cumin. Stir and cook for 1 minute until aromatic.
- Pour 4 cups chicken broth into the pot. Mix in 2 cans of white beans and ½ cup salsa verde.
- Return sausage and chicken to the pot. Simmer for 15-20 minutes at low heat until flavors meld.
- Remove from heat. Stir in ½ cup sour cream and ¼ cup Parmesan until mixture becomes creamy and smooth.
- Ladle chili into serving bowls. Garnish with green onions, chopped cilantro, and a fresh lime squeeze.
