Description

Cajun White Chicken Chili brings Southern spice straight to your dinner table with a pepper-packed punch that dances across your taste buds. Warm comfort meets bold flavor in this hearty bowl that’ll make your family ask for seconds.

Ingredients

Scale

Proteins:

  • 1 pound chicken thighs
  • 1 pound andouille sausage

Vegetables and Aromatics:

  • 4 garlic cloves
  • 1 jalapeno
  • 1 cup bell pepper
  • 1 cup celery
  • 1 cup yellow onion

Base and Seasonings:

  • 2 cans white beans (15 ounces each)
  • 4 cups chicken broth
  • ½ cup salsa verde
  • 2 teaspoons Cajun spice mix
  • 1 teaspoon ground cumin
  • Salt
  • Pepper
  • ½ cup sour cream
  • 1 tablespoon unsalted butter
  • ¼ cup Parmesan cheese
  • Lime
  • Green onions
  • Cilantro or parsley

Instructions

  1. Heat 1 tablespoon of oil in a Dutch oven at medium temperature. Sear 1 pound andouille sausage rounds for 5 minutes until golden brown, then transfer to a separate plate.
  2. Cook 1 pound chicken thighs with 1 teaspoon Cajun spice blend in the same pot. Sear thoroughly until completely cooked, then remove and set aside with sausage.
  3. Melt 1 tablespoon unsalted butter in the hot pot. Sauté 1 cup diced onion, 1 cup celery, 1 cup bell pepper, and 1 jalapeno for 5 minutes until softened.
  4. Add 4 garlic cloves, remaining 1 teaspoon Cajun spice, and 1 teaspoon ground cumin. Stir and cook for 1 minute until aromatic.
  5. Pour 4 cups chicken broth into the pot. Mix in 2 cans of white beans and ½ cup salsa verde.
  6. Return sausage and chicken to the pot. Simmer for 15-20 minutes at low heat until flavors meld.
  7. Remove from heat. Stir in ½ cup sour cream and ¼ cup Parmesan until mixture becomes creamy and smooth.
  8. Ladle chili into serving bowls. Garnish with green onions, chopped cilantro, and a fresh lime squeeze.

Notes

  • Always brown the sausage and chicken separately to develop deep, rich flavor layers in your chili.
  • Let the vegetables soften slowly to release their natural sweetness and create a complex base for the dish.
  • Adjust the Cajun spice blend to match your heat tolerance, tasting and adding more if needed for the perfect kick.
  • For a lighter version, swap out regular sausage for turkey sausage and use Greek yogurt instead of sour cream.
